Wet-mix is a single-pass spray drying process where vitamins and minerals are dissolved into liquid milk before drying, so each powder particle has uniform composition and better nutrient retention (particularly vitamin C and whey proteins). Dry-mix blends already-spray-dried milk powder with dry vitamin pre-mixes — faster and cheaper, but each batch has had more cumulative heat exposure.
